I purchased a fairly expensive ceramic knife (Kyocera 180mm black gyuto) with the understanding that it would be extremely sharp, as is the reputation of Japanese ceramic knives. When it arrived it was not blunt, but certainly not razor sharp, far from it; it would not untensioned paper, nor onions without some sawing-action. I asked the support team if this was normal or if I should have a replacement, they said something along the lines of "the knife was certified as razor sharp when it left the production facility, but we understand you may be unsatisfied and your satisfaction is the most important thing to us, we will arrange for collection and replacement" - great! I received the second knife and unfortunately it was the same as the first, possibly even less sharp, they said they had no issue with my request to send that one back for a refund, so that is what we did, again, great! I told them I would just buy a stainless steel knife instead, and did so; I bought a Tojirou DP VG10 Gyuto of 180mm and it is indeed razor sharp, easily slices hairs even! While I felt the need to apologise for messing them around a bit, and the whole process took a while, they were very helpful and did everything they could to ensure my satisfaction. I am very happy.
